Lemon Cheesecake Overnight Oats
These are so tasty and totally make me think I am eating dessert for breakfast! It packs 30 grams of protein from the protein powder, milk (I use Fairlife Whole milk lactose free to get high protein) and the greek yogurt and greek cream cheese - which has more protein than reg cream cheese! These take a bit more time and dishes to prepare than my other OG recipes, but its worth it! I highly recommend WAITING until the AM to put your yogurt topping a top the oats layer, otherwise it just doesn’t set as well. Also feel free to add extra creaminess topping by putting my fav coconut whipped cream on top!

Ingredients:
Crust
2 graham crackers crushed
1 teaspoon melted butter
1 tsp sugar or honey
Oats
½ cup oats quick, minute or rolled all work
1 tablespoon chia seeds
2 tablespoon limoncello protein powder
½ cup milk of choice
½ teaspoon vanilla extract
½ tablespoon lemon zest about half of one medium lemon
Cheesecake topping
½ cup plain Greek yogurt
1 teaspoon honey
1 tablespoon greek cream cheese
1 tablespoon lemon juice about half of one medium lemon
1 Tablespoon powdered sugar
Directions:
PREP TIME: 10-15 Minutes
COOK TIME: 0
TOTAL TIME: 4-8 hours (Overnight!)
MAKES: 1 Serving
Directions:
Mix oats, chia seeds, protein powder, vanilla extract, milk and lemon zest together in a bowl. Set aside. Let sit for at least an hour.
In a separate bowl combine yogurt, lemon juice and honey.
In a mason jar or container, press the crust mixture into the bottom of the jar.
Layer with oat mixture and top
Wait until the morning to top with the cheesecake topping.
You can top with additional crushed graham cracker crumbs and lemon zest if desired..
