Crockpot Soyaki Bowls

Make it

Ingredients:

  • 1-2 lbs chicken breasts

  • 1/4 cup chicken broth

  • 2 cups Trader Joe’s soyaki sauce or Veri Veri Teriyaki sauce

  • 1/2 cup diced red onion

  • 1 cup shredded carrots

  • 1 cup edamame

  • Avocado (optional but super yummy!)

  • 4 cups cooked white rice (sticky or jasmine work

  • best!)

    Sauce

  • 1/3 cup creamy peanut butter

  • 2 tbsp coconut aminos (or soy sauce)

  • 1 tbsp honey

  • 1 tbsp sesame oil

  • 1 tsp garlic powder

Directions:

PREP TIME: 10 MINUTES

TOTAL TIME: 4 HOURS

MAKES: 5 SERVINGS

Add chicken, broth and sauce to crockpot and cook for on high for 3-4 hours

Once chicken is cooked, shred with two forks and cook on low for another 30 minutes. While the shredded chicken is finishing, cook rice and make sauce by combining ingredients in a small bowl. Assemble bowls with rice and chicken. Top with onion, carrots, edamame and finish with sauce. Enjoy!
